Oat-based Aussie Bites Are Treats for the Gluten-free Soul

It was a pleasant surprise to find a new gluten-free cookie in the random Basher’s grocery store in the downtown of little Carefree, Arizona, but that’s where I encountered these delicious little nuggets called “Aussie Bites,” from Best Express Foods in Hayward, California.

Aussie Bites are based on the Australian anzac biscuits, but these have to be the tastiest version I’ve ever tried.

Yummy gluten-free Aussie Bites are a treat any time of the day.

With an ingredients list based in whole grain rolled oats, oat flour, unsalted butter, sugar, honey, raisins, apricots, sunflower kernels, flax seeds, and shredded coconut, I could only be happier if everything was organic as well.

It looks like you can purchase Aussie Bites at various stores including Costco.

 

Can You Create Grain-Free Glorious One-Pot Meal Recipes?

Hi Daniel. Any Glorious One-Pot Meal Recipe can be made exactly the way you want it to be. If you are omitting the pasta or dry grains such as rice or quinoa from a recipe, you also omit the extra liquid listed as that is only needed to hydrate the dry goods. So, if you omit the 1 cup of rice from a recipe, you would also omit the 1 cup of water or broth (or possibly coconut milk) from your ingredients list.

You can double-check the amount of liquid in a recipe that is solely to hydrate the grains by consulting the Common Measurements chart beginning on page 9 in the Glorious One-Pot Meals cookbook.

Depending on the recipe, it may call for small amounts of other liquids such as soy sauce, apple cider vinegar, or orange juice, but those are meant to enhance the flavors and not to hydrate the grain.

The USDA is considering approval of genetically modified apples branded as “Arctic Apples”. This unlabeled science experiment will stop apples from turning brown, but we don’t know if it’s safe for us and our food supply.

After the more than 30 million dollars that Monsanto and other bio-chemical companies spent to defeat recent labeling initiatives in Washington state and California, we still don’t have any way for us, the aware food consumers, to know if a food item has been genetically altered. I’m not going to go into all the reasons you might want to protect your health and avoid GMOs today, but you can find what I’ve written in the past on GMOs if you are still confused about the science and the implications.

With apples, they are on my “Always buy organic” list anyway because conventional apples consistently test highest of all produce for pesticide residue.

Do You Have to Cook the Pasta Separately in a Glorious One-Pot Meal?

Reader question: Quick and probably stupid question on the mac and cheese recipe on pp 176-177…is the macaroni cooked or raw for the recipe?  Don’t really want to waste the cheese trying it wrong. Thanks. ~Matt, Maryland

Hi Matt! This is a great question because I can emphasize that Glorious One-Pot Meals never require pasta or rice to be cooked separately. You always put it in the pot raw.

When I was researching one-pot meal cookbooks, before I published Glorious One-Pot Meals, I noticed that most recipes included something along the lines of:

  • Serve with pasta cooked according to package directions.

or

  • Serve with a side salad or loaf of bread.

To me, these recipes were no longer “one-pot meals” because now you needed a second pot to boil water in and cook the pasta, or a second bowl to hold a salad, etc.

I designed Glorious One-Pot Meals to be TRUELY one pot by providing  a complete and wholesome meal in a single pot.

Holiday Food Challenges – Video

I laughed out loud with my daughter as we watched this video about preparing a Thanksgiving meal for food-specific guests. It reminded me of an evening on our family trip to Israel last spring when my brother was charged with finding a restaurant to satisfy our crew including vegans, vegetarians, gluten-free-ers, dairy-free-ers, dairy-lovers, and meat-eaters. He threw his hands up in defeat.
