How To Use a 6.75-quart Dutch Oven with Glorious One-Pot Meals

Reader question: I just bought your cookbook after reading about it in Momentum Magazine. My Le Crueset pot is 6.75 qt.so how much should I increase the ingredients? 4 times?? and the cooking time?? you only list a 5.5-6 qt pot on page 12. Thank you. ~Janet from Lima, OH

Hi Janet! Thanks for writing and your interest in Glorious One-Pot Meals.one pot meals recipes Dutch oven

The general rule of thumb is that you need one quart of Dutch oven for every person you plan to feed. So, the recipes are written for a 2-quart Dutch oven and feed 2 people. Generally, we’d say that a 6-quart Dutch oven would feed 6 people and you’d triple the recipe and increase the cooking time by around 20 minutes.

Because your pot is closer to 7 quarts, you could feasibly increase the recipes by 3.5 times, so that instead of 2 chicken breasts, for example, you’d use 7, and increase the cooking time by closer to 25-30 minutes.

In reality, I usually find that most people eat a little less than 1 quart of cooked food, and a 3.5-quart Dutch oven, for example, easily feeds 4-5 people. A fully-loaded 6.75-quart Dutch oven would likely feed 9 people. As my pots get larger, too, I might increase the amount of protein and use more fish, for instance, while using less rice than if I were strictly tripling the recipe. One of the great things about the Glorious One-Pot Meals cooking method is that you can make the meal the way you want to make it without compromising the finished product.

Please realize that as pots get larger than 5.5-quarts and the volume of food in the pot increases as such, it becomes even more important to ensure the oven is fully preheated to 450 F before putting the full pot in, and to follow your nose to know when the meal is ready. I use a stand-alone oven thermometer to validate my oven temperature.

Remember, too, that you can still cook a Glorious One-Pot Meals recipe for 2 in a larger-than-2-quart cast iron Dutch oven.

Natural Help for Bleeding Ears of Cats and Dogs

As our cat has aged, it seems her ears are becoming more prone to cracks and bleeding. Just last night I awoke to feeling drops of liquid hitting my arms and realized the cat was shaking her head and spraying me with blood from the crack on the tip of her ear. Yuck.

Luckily, I can save myself a trip to the vet this time and help the wound on her ear stay clean and heal by reaching into my cabinet for Green Earth Farm’s Calendula Creme.

Gluten-free Bread Option: Try Pancakes

One of the most frustrating aspects about going wheat-free or gluten-free is the loss of bread. For more than 5,000 years, bread in some form has been a staple food for human civilization, and it can be hard to find substitutes for those familiar, bread-centric food items. Like a sandwich.

Let’s face it: there are a lot of things to love about sandwiches. They’re portable, easy to assemble, and contain a good ratio of carbs to protein to give the body energy and satiety. Many gluten-free breads are crumbly, hard, or generally unsatisfying to use in a sandwich. That’s why I’ll often use gluten-free pancakes in place of sliced bread for a pancake sandwich.

I’ve enjoyed these gluten-free pancakes by Elana Amsterdam of ElanasPantry.com, but sometimes I take the easy route and use Pamela’s Gluten-Free Baking & Pancake Mix. Regardless, I always triple the recipe so that I have lots of extra pancakes for later snacks and sandwiches. Pancakes are easy to pull out of a freezer-safe bag or container and pop in a toaster oven or microwave to thaw and heat for a quick breakfast or lunch without a mess.

This pancake sandwich is spread with organic SunButter and Colorado Mountain Jam‘s Organic Strawberry Rhubarb jam. Yum!

Last night, after an hour or so of rolling around and playing games in the park across the street from our house, my daughter came into dinner and began complaining that her arms, legs, and face were itching. I could see her skin was looking irritated.

I sent her directly into the shower and held her plate aside. I knew exactly what she was feeling because I’ve been known to react the same way after sitting on a lawn.

What should you do if you find yourself itching after contact with an allergen? Here are some good steps to take:

1. With any topical exposure, the first step is to rinse and cleanse the area to remove any lingering substances.

2. A clean lotion may then be applied all over the body. I like Everyday Shea lotion, but just be sure that whatever you choose is free of fragrance, colors, and petroleum products that could cause further irritation.

3. If the skin is still red and itchy in spots after cleansing, a good soothing spot creme is Florasone Cardiospermum Creme.

4. If the skin is still not calming down, or the person is still literally coming out of their own skin, try a homeopathic anti-histamine remedy* like Histamantium. This works like Benedryl, but without the side-effects, and is safe for babies, too.
