Campfire Cooking with Glorious One-Pot Meals

Wally W. of Cornville, Arizona sent me this message about his experience in preparing Glorious One-Pot Meals in a campfire rather than in an oven:

Hello Elizabeth,

I found your book at the library when searching for dutch oven cookbooks. When I go camping it’s fun to cook in a dutch oven (camp oven, with feet) over charcoal.  I’ve found that your recipes from “Glorious One-Pot Meals” work just fine in a camp oven.  The only trick is using enough coals for a hot oven.  Recipes that cook more than 30 minutes will require a new set of hot coals mid way through the cooking.  Otherwise, the recipes as given are wonderful in the open air.

Dutch Oven Recipes for Camping: Glorious One-Pot Meals

I often receive questions about using the Glorious One-Pot Meal cooking method for camping, so today I thought I’d share a testimonial as to how well Glorious One-Pot Meal recipes work for campers:dutch oven recipes

I found your book at our library when I was looking for Dutch oven recipes.    My husband and I plan to do some camping next summer, and I was wanting some “good food” Dutch oven recipes as opposed to “camping food” recipes. I thought it would take all year to get a few “special” recipes. So far, we’ve tried three recipes (pork and quinoa, mac and cheese, and rosemary salmon), with very good results.    Your recipes are what I was looking for portion-wise, taste-wise, and flexibility-wise. I’ve been putting our old-school cast iron Dutch oven in our camping stove (we have the smallest Big Green Egg), with very good results. I love the “it’s done when the smells release” theory of cooking.

I plan to buy the book when I have to return it to the library, have already recommended it to a friend, and plan to give it (with a 2-quart Dutch oven) to a young friend who’s getting married in a few months.

Glorious One-Pot Meals over a campfire?

Hi Lisa. I’m thrilled to hear you are enjoying Glorious One-Pot Meals! While I’ve never personally prepared GOPMs over a campfire or on a grill, I know readers who do so regularly with great success.

My recommendations:

  • Choose a recipe without dry goods like pasta or rice. I would think a combination like potatoes, meat and veggies with spices would work perfectly. My “Rosemary Chicken” or “Dinner for Dad” GOPM recipes come to mind
  • In a campfire, nestle the Dutch oven into the coals and pile more coals around the sides and on top, so the heat comes from all sides.
  • On a gas grill you can control the temperature and shoot for 450 F with the lid closed. If you are using a charcoal grill, I might suggest you remove the grate and settle the Dutch oven into the coals, as you would in a campfire.
  • Use a non-enameled seasoned cast iron Dutch oven. Although the enamel is fired on at 1400 degrees, much hotter than your typical campfire, I don’t know if it might become discolored or stained if used with coals.
